Recipe for You or Two: Avocado Toast

As with any recipe calling for avocadoes, the key is finding a ripe one. A ripe avocado will have a little give — but not too much — when you press it. You may have to buy one and let it sit on your kitchen counter for a few days. Or visit a Hispanic market, where you’ll usually find a ripe one.

Avocado Toast

1 ripe avocado, mashed

2 slices bread, preferably whole grain bread

Garlic powder, onion powder, salt, pepper and/or lemon-pepper seasoning, to taste

Optional toppings: 2 strips crisp bacon, thinly sliced tomato, shredded cheese and/or a fried egg

Directions:

Toast bread. Remove avocado flesh and mash. Season to taste, then spread on bread and top as desired before serving.
